Each state has a different variety and quality of mango in india. mangoes are known to have a high content of natural sugar in them which is why diabetics are often asked to resist their temptations. Some varieties have lesser sugar content in comparison to others. We chose the humble ‘Totapuri’ mango for our jam as it has the least amount of natural sugar present in it. Instead of an alphonso, or langra we chose this mango so that we could add the sweetness of stevia in it. We also infused the earthy flavours of ginger, which blends beautifully with the citrus and sweet flavours of mango. Now you can enjoy mangoes long after the season has come to an end. We have not used any other hidden sugars in this jam so it will not elevate your blood sugar level.
