The best part is that it is so simple to make and uses only 6 ingredients. 

 

Can sugar free cookies genuinely taste good?

I never knew that Keto cookies could actually taste better than regular cookies. Hands down this is the tastiest Keto cookies you can get your hands on. It’s chewy, nutty and chocolaty. If this is what you can eat on diet then I would choose to be on a Keto diet for the rest of my life. 

Previously it would be tough to find the right ingredients for making a good tasting sugar-free sweet dish. But that is not the issue anymore. There are several companies offering sugar substitutes. The real challenge is choosing the right sweetener among the many options available today.

 

The Sweetener I chose to use

I chose to use Vistevia’s Stevia based All-Purpose Sweetener. 3 Reasons why I chose this sweetener-

  • It’s sweetened with stevia and has only Natural ingredients which means it is safe for everyone. You can choose to share the products made with this with all your family members, including children. In fact it’s a great way to get your children to eat less sugar, yet enjoy the pleasure of eating something sweet.
  • It tastes just like sugar! Everytime I cook with this sweetener I cannot tell the difference between sugar desserts and sugar-free desserts. There is no bitter aftertaste, just the natural sweetness of stevia.
  • It bakes and browns just like sugar. It looks delicious. Unlike erythritol which doesn’t caramelize, this sweetener caramelizes and makes the dessert look the way it should. Also this way you know when the cookies or cake is baked just by looking at it.
  • It’s really easy to use- you use it just the way you used sugar.
  • It creates mass – you can use upto 50% of Vistevia’s sweetener to substitute the volume of sugar. Unlike other sweeteners which are used in very small quantities, this sweetener adds volume to the product and maintains the texture and quality of the final product. (For Example – if you need 100g of sugar in a dessert you need to put 40-50g of Vistevia’s Stevia based All purpose sweetener, depending on your desired level of sweetness).
  • Extremely low in Carb count. Stevia of its own has zero calories.

 

The flour I chose to use

The main ingredient for these cookies is Almond Flour. I chose this flour as it contains 10 times less carbs than regular flour. It has many benefits and moreover tastes delicious when roasted. It’s great for Keto as it is rich in protein and fiber. If you are a diabetic it helps regulate blood sugar levels (many today follow the Keto diet), and reduce cholesterol. 

Almond flour is easily available in any health food store and abundantly sold through multiple E-commerce platforms.

I choose the whole almond flour which has the skin too, because it adds more fiber content.

If you wish you can also make the flour at home by grinding the almonds in a food processor till it reaches a flour like consistency – this way you can be doubly sure about the purity of the product.

INGREDIENTS

So let’s take a look at the ingredient list for this Chocolate Chip Keto Cookies

  • 1 cup almond flour
  • 45g softened butter
  • 50g sugar free dark chocolate chips
  • 1 egg
  • 4g baking powder
  • 6 tbsp Vistevia Stevia All Purpose Sweetener
  • Method

    • Line a baking tray with butter paper. Take a small cube of softened butter and rub it on top of this sheet as it will allow the cookies to easily come off the sheet after baking.
    • Set the oven at 180 degree centigrade.
    • Cream together the butter and Vistevia sweetener. It is important to use softened butter here. You can leave the butter out of the fridge at room temperature for about 10 – 30 mins (times depends on the temperature, so during summers you leave it out for 10 mins and winters a little longer)
    • Once the butter and sweetener is creamy add the egg and beat with a fork. 
    • Add the almond flour and baking powder next. 
    • Lastly you can add the chocolate chips. I usually buy a bar of sugar free dark cooking chocolate and cut it into small pieces. 
    • Let this sit for about 10 minutes. If it’s a hot day you can put this dough in the fridge so that it’s easy to spoon it onto the baking tray.
    • Use a scoop to spoon the cookie dough so that all the cookies are the same size and take the same time to bake. 
    • Flatten it just a little with a spoon wet with water.
    • Bake for about 12-15minutes till the sides start to brown
    • The hot cookies might feel too soft but once cool, they will be fine. So please make sure not to over bake it. 

    Take out the cookies from the baking sheet while they are hot, or else there is a chance that the paper will stick to the bottom of it. This cookie is soft, chewy and really tasty. You should definitely give this a try at home. If you are a mom on Keto, you can also include these cookies in your children’s diet, it’s a great way to get them to eat almonds.
